    For us pancetta is like thicker, fattier streaky, usually diced. And probably saltier. I think.

    Yeah, never did understand why people can't dice their own. It takes 10 secs and you don't get charged a premium.

    You can have thick or thinner slices depending on what you ask the butcher for.

    Cut lengthwise a duck bacon rasher is 10-20% shorter than a regular slice but it is least 50 % meatier than a streaky rasher with none of the dryness one gets from back bacon. Additionally the rich/ delicious factor of duck bacon trumps all.
