    Sorry, no pictures!

    We did some fried chicken that took days from beginning to end. First we did a tabasco based brine. That sat overnight and then went straight into seasoned buttermilk and then heavily dredged in Old Bay and cayenne four. That then goes onto a wire rack and sits in the fridge for 24 hours uncovered so that the buttermilk and flour form a hard crust. Finally it is deep fried and then glazed with more Old Bay, paprika and cayenne melted into....lard.

    That was super delicious and probably took a year off my life.
