    I fired up the smoker for about 6 hours this morning, with apricot and apple wood from our trees. Smoked some steelhead, chicken breasts, and two hunks of cheese. This is a 1/2 kilo wedge of Manchego, a bit softened after two hours in the smoker. In the process, it created a puddle of intensely smoke flavored butterfat, which collected in the tray. I imagine that will make some incredible flavoring for something, not sure what yet.

    Dinner tonight after the morning of running the smoker. Dixie and I shared a hunk of fresh smoked steelhead trout with garden grown cherry tomatoes, beans, cucumbers, basil etc, and some store bought lettuce, jicama and olives. I added slivers of the smoked Gruyere cheese that I made along with the Steelhead. Honey mustard dressing. Yum!

    This morning was this roasted tomato tart. The crust was made like a graham crust for cheesecake but with stoned wheat thins and garlic brown butter to keep it savoury. The tomatoes were roasted and then layered with tallegio, gouda and parm and then baked again.

    Today's sourdough loaf. I've been meaning to make a 1980s style milk starter but haven't gotten around to it yet, so this is the current standard rye and red fife starter.
