Preheat oven to 400f
3 cups rough chopped pumpkin, kobucha, butternut or whatevs
1 med onion chopped rough
3 cloves garlic smashed
2 teaspoons peeled and chopped ginger
a bunch of fresh thyme
3-4 green onions chopped
1/2 tsp or more Scotch bonnet/habanero
1 tsp salt
fresh ground pepper
Mix all ingredients together and coat lightly with non virign olive oil.
Spread on baking sheet and bake in oven for 10 to 15 minutes, stirring frequently.
You want the veg carmelising but not burning.
Heat a stock pot on the stove. When HOT add olive oil to coat bottom.
Add 1 tsp cumin seed.
Before it burns add another chopped onion, then more garlic, ginger,
and another bunch of green onions, sauteeing for a minute or so between each addition.
Add roasted veg and sautee for yet another minute.
Add four cups of veg stock, bring to a boil and then simmer for 10 minutes.
Cool for 5 and then blend with a wand blender.
Add coconut milk until you reach desired texture. I used roughly one half can of Grace's
coconut milk. In my opinion this is the best canned coconut milk in the world. It is neither
as cloying as Thai coconut milk nor as meh as "light" coconut milks.
Taste for seasoning and heat. Add more Scotch bonnet, salt and pepper as required.

I use this. There is no option for propane but it gets to 700f and always delivers wood fired flavour. Since you are more vegetarian than I it's probably overkill for you though there are significantly smaller versions.
Oddly, I don't have any pictures of pizza on LaMar, only from Tex. Here's a loaf of bread baking in LaMar though.

I have the ooni 3 that I think Geoff has? I believe they’re on sale right now for $199. I paid $299 for mine. It uses wood pellets. Gets to almost 800 degrees
