Hadn't thought about it. I don't eat it but if it isn't cruel I don't see the problem. The eggs I buy aren't cruel (in fact each box saves a chicken from the slaughterhouse - rescue hens) so I'm cool with that. Both - better than meat cos the animals get to not die, better for the planet (that were raping)... Nothing tastes as good as beef yet but its getting there. The chicken substitutes are decent - give it a try sometime.

Another meal at the culinary school.
Braised lamb shank adobo (Filipino ).
Pheasant, field mushroom and wild rice soup, with a puff pastry crouton.
Deep fried soft shell crab with argentine shrimp
Sous vide wild boar tenderloin, foie gras butter, rosemary demi glace, whipped potatoes, asparagus and an arugula salad.
Fruit tart and avocado ice cream.

I understand not eating meat to avoid cruelty and I have a great deal of respect for that choice. I do not understand the exclusion of fish in that equation though.
Geoff what are your feelings on attempts to control invasive species that have been introduced by man?
Going forward with scuba diving I am seriously considering getting my lionfish certificate. This is a humane catch and kill of a species that doesn't belong in the Caribbean and is annihilating local sealife.

In a way, yes. I’d rather we hadn’t eaten all the Dodos, for example. But if the Dodo had been farmed and became commonplace, then no problem.
Culturally, we’re bound to favour some animals over others, but these are arbitrary distinctions, often based on sentiment. I can’t imagine eating a guinea pig, for example, but have no issue with Peruvians eating them.
Would you eat baluts? I'll eat eggs, I'll eat chicken but baluts just don't cut it with me. Just one of those arbitrary choices.
And chickens, by the way, are disgusting filthy animals all on their own. How they're butchered is of no interest to me.
