    Pretty cool! I'm assuming it just a dilution system which is how I use most sauces though - less for hot ones, more for cool ones - same effect. Still clever.

    Five days in a spiced sugar cure, now one day in the fridge in a spice blend, then I get to stay home on Friday so that I can smoke my version of Montreal Smoked meat/ corned beef/ pastrami. This is five pounds of eye of round.

    Three cheese (buffalo mozzarella, cheddar and teleggio - the latter is a bit bummy tasting tbh, but still nice), and chorizo pizza with lots of chilli. Very tasty.
