    Read a story in Epicurious about the KFC-recipe and their apparent use of white pepper and saw this passage:
    After all, who uses white pepper? It's the white sheep of the spice family, the oft-overlooked, much-maligned, pale simulacrum of the gutsy, robust black pepper we all have in our grinders. And around the Epi offices, its reputation wasn't much better.
    I was pretty taken aback. Is this a normal opinion of white pepper on the other side of the Atlantic?
    Personally I use a lot more white than black pepper.

    wow. Allspice I knew we used more in Scandinavia than in other places. But not white pepper

    That might be a bit harsh, but white pepper is far less common here than black. I use white, but I use far more black. It is uncommon to find white peppercorns.

    I love white pepper, but I just don't find it to be as utility as I do black. I would prefer ground white pepper over black for something like a chicken breading or spice rub for grilled meat, but nothing beats tellicherry in the grinder for daily use on hatever I'm stuffing into my maw at the time.
    It is now my duty to completely drain you.

    Interesting. I mostly use ground but whole white peppercorns are great in stews.

    For steaks I've stopped using black pepper all together. Plenty of salt and then just a healthy dose of ground white pepper
