I love pineapple but not in pizza. But I'd eat it. Sweet and savoury work great together! Pork and apple, bacon and maple syrup, cola and bbq rubs, Duck a l'orange...

I doubt pizza pineapple is fresh .... think it will be tinned hence probably added sugar = yuk.

Fresh pineapple (at just the right stage of ripeness) is awesome.

Mine is always fresh. And macerated with crushed chiles. It's actually the best part of that pizza. Everything else just elevates that spicy, sweet, charred flavour.

Finally, got back to backing. My first try - ciabatta. Turned out a little bit heavy, but OK.

A little fresh fish action last night.

Busy food day today, smoking pork tenderloins and a beef brisket while slicing fuyu persimmons for the dehydrator. Our tree makes this almost a full time job this time of year. Some friends are dropping by in an hour or so to share the carcinogens with is... err, smoked meats I mean.





(you can see from the one on the middle that we need to get these before the birds and squirrels do.)
