    Mine is always fresh. And macerated with crushed chiles. It's actually the best part of that pizza. Everything else just elevates that spicy, sweet, charred flavour.

    Busy food day today, smoking pork tenderloins and a beef brisket while slicing fuyu persimmons for the dehydrator. Our tree makes this almost a full time job this time of year. Some friends are dropping by in an hour or so to share the carcinogens with is... err, smoked meats I mean.
