I love pineapple but not in pizza. But I'd eat it. Sweet and savoury work great together! Pork and apple, bacon and maple syrup, cola and bbq rubs, Duck a l'orange...

Tacos al pastor- pork, pineapple achiote paste and more. One of my five or six favourite taco varieties.

I would happily try any of that, but I just wouldn't 'order' something that I knew had sweet integrated into savoury. To be clear, I am only refer to a bright sugar sweetness. Many things that are more... subjectively? sweet are fine. I would consider fresh herbs, or freshly roasted and properly brewed black coffee to be 'sweet', and happily use them in savoury dishes.

I confess I didn't have enough green onions so it is not quite the holy trinity as I used white onion at this stage.

Thanks Chris. It was really good, but I made it smaller than usual and used just a tiny bit too much roux. I didn't have anymore duck stock so I chose to eat it a bit thick.

Nothing wrong with that. I actually prefer my gumbo like that as I eat it with very little rice, and sometimes no rice, just potato salad.

I was very skeptical myself, but my friend made me try it once. It was surprisingly okay.

Finally, got back to backing. My first try - ciabatta. Turned out a little bit heavy, but OK.
