    I was never a food connoisseur, so to speak, but lately I'm discovering a new side of me.

    Few weeks ago I ate an excellent salmon steak tartare. It was so good that I couldn't stop thinking of it... until I made it at home.

    Once you get past some of the inhibiting factors of tartare, I recommend a trip to Germany for a sampling of Mett. It's absolutely delicious. Ostensibly pork tartare, spread on a crustini or toasted bagel. Gah, I wish someone in the States would take the care to make it. Sadly, I haven't found it anywhere but Germany.

    Also, my wife is one of those cilantro weird-o's. I haven't cooked with it in years.

    Yes. It's delicious, I swear. There are strict meat laws in Germany (not unlike their strict beer laws) that limit the sale of minced pork to only (a) the highest quality meat and (b) the same day as butchering. If you really want to knock it up a peg, my grandparents from Germany used to eat raw hamburger on sandwiches... here... in the US... with our dodgy food restrictions... Even I am not THAT desperate to get my German fix.
