    Close, but no canelloni.

    It's actually pizzacotti.

    I roll thin ham and pepperoni slices around mozzarella sticks, then stuff into the partially cooked shells, add sauce, top with cheese, and bake 30 minutes.

    2 or 3 make a good, quick, microwaveable lunch.

    My ribeye cooking buddy wanted to try something different so he picked up some T-bones so I decided to take a new approach, you know, an experiment.

    I made a hybrid rub of 3 parts steak rub, 1 part brisket rub and 1/2 part pork rub. I then smoked them indirect at 200 with mesquite and a little applewood for 25 mins. I wish they'd have been a little thicker as I'd have liked them to smoke a little longer, but they were at around 95 internal so it was time to come off.

    Next it was time to sear. I've never had the egg rolling like this before, so it was about a minute a side, maybe a little more all open dome. It was so hot the thermometer wrapped as soon as I closed the lid.




    They turned out pretty good, if not a little different. Definitely something I'd do again when I wanted something other than the usual ribeye.




    Made a salad of baby greens, sliced tomatoes, pink salt, cracked pepper, olive oil, balsamic, candied pecans and goat cheese. It was really good, really really good. Go back for seconds good. Please excuse the blurry picture. I was hungry...

    Well, today was my last day on the Island for my golf holiday, and this picture represents oysters 72-84 since I got here. This time accompanied by very excellent fresh crab cakes. I'll be out for lobster supper again later, and I might eat 2, which would make a baker's dozen for the trip. I'm nowhere near sick of any of it.
