The secret is 4tbsp of balsamic vinegar at the end , makes the mild spices pop.

Mexico makes the classic lengua taco. They brown the tongue and then braise it in spices until very tender. Salsa verde, avocado and red onions.
We've got a new little mercado in town and my Waygu beef source tells me they have been talking to him about buying as much tongue as he can give them. I am pretty excited about this, as no one here makes them at this time.
