    That's why I don't eat out so much - we can probably do it better at home. And a 4 hour wait for something subpar?!

    I'm watching Diners, Drive-ins and Dives (anyone else watch it?), and it's inspiring me to try new things. Homemade Pestrami, sticky sesame ribs, fried chicken... I just bought an oil thermometer which should help. Not my waistline though.

    While I can't argue the first point; I also can't talk poorly about Franklin's brisket. It's far from subway and the best restaurant brisket I've ever had, hands down.

    Well... I can't really compare objectively. I think mine tastes better, more flavor (as does my wife), but his is more tender. Of course they use two grades higher beef than I can get my hands on; prime vs select. I really need to befriend a butcher.

    I know of a few places that cold smoke bacon, but the stuff you get at the grocer is hot smoked, and should be cooked. Regardless, why would you eat chewy cold bacon when you could have it hot and crisp?
