    It's my go to beer for salty deli style meats. Those light citrusy hops really temper the salt.

    I think, if you look closely, you'll see it is tomato on tomato action, which I think is banned in some of the more conservative states.

    Very close! Buffalo mozzarella. Lovely as good tomatoes are (there were plum iirc) sun dried tomatoes are in a whole different league - a better league. I fricking love them.

    Here's my recipe:


    Serve these hot or at room temperature.

    4-6 bacon slices or 1 slice ham, chopped.(This is completely optional. A vegetarian one does not even need
    fat added. .)
    1 1/2 cups chopped onion
    1 1/4 cups BBQ sauce, homemade or your favourite purchased
    3/4 cup dark beer
    1/4 cup mild-flavored (light) molasses
    3 tablespoons Yellow mustard
    2 tablespoons Worcestershire sauce, or more to taste.
    4 to 6 teaspoons minced canned chipotle chilies, or home smoked chipotles, or hank's Adodbo
    1-2 green peppers chopped

    If you want to start from scratch, cook two bags of black beans using your favourite method and save some
    cooking liquid.

    OR, if you are lazy:
    6 19-ounce cans low sodium beans.



    Preheat oven to 350°F. Cook bacon in large skillet over medium heat
    until crisp. Transfer to paper towels and drain. Transfer 2 1/2
    tablespoons bacon drippings from skillet to large bowl. Finely chop
    bacon; add to bowl. Add onion and next 7 ingredients to bowl and whisk
    to blend. Whisk in 4 to 6 teaspoons chipotle chilies, depending on
    spiciness desired. Stir in beans. Transfer bean mixture to a large oven safe pot.
    Bake uncovered until liquid bubbles and
    thickens slightly, about 1 hour. Cool 10 minutes.

    OR

    Smoke for a couple of hours. If they taste too sweet a shot or two of espresso works wonders.

    I also do a pretty delicious hard cider smoked beans.
