I've eaten plenty of common cotton tails. But with wild ones you can't eat them until after the first good freeze. The "Flemish Giant" breed was originally created for meat. Our rabbit Max is a chocolate dutch:

This isn't him. But if you've seen one, you've seen them all. He is ~ 6 pounds, while a Flemish giant can be 30.
