Pan seared crispy skinned arctic char, beluga lentils, grown by a friend, with the last of my homemade duck bacon, carrots, onions and celery braised in red wine and oven roasted balsamic beets. A bottle of Mrs Wigley rosé.

People just like to crap on stuff like this, including spam, and airline food,
but I really think people underappreciate for the sake of underappreciating.
I've had many a dinner like this with great satisfaction in lean times.
But I usually also insisted on having fresh baguette to spread the devil on.
Oh, and basil leaves, and black olives... and sometimes dried tomatoes, if I could afford it.
Not half bad at all, actually.
