    I like them with more salt than I would normally use and either morita or chipotle chile. The fire or smoke flavour and the heat from the chile really temper them

    Wow, I haven't been here in a while, and my first post is in the food thread.
    What's wrong with me?

    Sadly, no pics as it's been a while since I made it, but trust me, it was great!

    A few weeks ago, while in the throes of consecutive ice storms, I made a big batch of East Texas Red Chilli.
    I did add a couple of extras that a real Texan might scoff at, but I am daring.

    3# cubed beef
    1# hot Italian sausage
    2 LG onions

    All browned in oil.

    A couple tsp of minced garlic
    1 Tbs oregano
    4 Tbs paprika
    1tsp cumin
    Salt
    White pepper
    28 oz each tomato sauce and whole tomatoes
    About 5 or 6 each of 4 kinds of dried peppers. Poblanos and anchos for flavor, and pequinos and some Thai for heat.
    And for a surprise, about 5 oz dark chocolate.

    All simmered for a couple of hours.

    Man, was it good. Nobody could identify the chocolate flavor until I told them about it.

    Found a nice big flatbread thing at a local bakery and made a pizza with a bit of pesto, fresh garlic, tomato, grilled artichoke heart, chopped bocconcini, and spicy soppressata. When it came out of the oven I finished it with some fresh arugula. Very nice.

    Chili is a noble thing. When I'm not eating like an insane 8 year old I make con carne and a white turkey chili.
