    Over the last few days I've had a ribeye that I made a herbed horseradish cream for with pan seared spicy shrimp, some baked salmon thing with prosciutto and asparagus in a homemade butter puff that I couldn't get a good picture of and was too damn hungry to try harder for, and a pan seared duck breast with a red miso sauce I made that turned out quite nice.

    I was close! According to me, that is.

    Love me a good wellington. Lots of prep, but worth it. You make them with a specific technique?

    Never made it! Hence special. Figured I'd buy a few inches of fillet, salt the hell (why is hell not in the android dictionary?!) out of it, sear it briefly, wrap it in Parma ham, roll the puff pastry, cover in chopped mushrooms and pate, wrap, chuck in the oven. I haven't consulted a recipe. Thoughts?
