    I never flip omelettes. I just put it on a low fire, and use a lid. That way you can add large amounts of cheese on the top, without it having to chisel it from the pan later on

    I love Spanish omelette as I lived on it for ages. Very simple, potatoes, garlic and eggs. I don't flip it, just cook the bottom and put it under the grill.
