    These were at a restaurant, of course. Cape May, NJ oysters (but not, I believe, Cape May Salts, one of my favorites). They were lovely, though.

    New protocols for focaccia. Higher hydration, far les kneading and a lot of folding. Basically everything I am doing with bread lately. I am not really a fan of focaccia but this was super light, chewy, fluffy and crunchy all at the same time. Also tall for focaccia. 2 1/2- 3 inches tall.

    Maldon flakes. The olive oil was a "Grand Cru". The quality of those two items makes all the difference.
