Does some characteristic of the skin make one of them a better choice for a watch strap? Isn't the pattern pretty much the same look? Does it come down to the fact that alligator is native to North America so croc skin would be an import item?

Crocs are protected in many countries where they are native, so it might also be an environmental question. American alligator is not protected, and is farmed for food and leather in your neck of the woods. It might be slightly finer grain, but I believe that also depends on age of the animal and where on its body the leather comes from.
Too many watches, not enough wrists.
Of commonly available straps, I generally prefer the look of the smaller alligator scales.
