    Made “boneless ribs” last night; essentially pork shoulder cut into rib-like strips. Holy crap, they were so good. Going to make some mac and cheese today (not from scratch, it’s a Costco meal, you just put it in the oven for 45 minutes) to stretch the leftovers. The ribs were so easy to make, too! Five to ten minutes of prep, then the oven does most of the work over the course of three hours. One of the tastiest and easiest meals I’ve made in years.

    Looking around for recipes a few weeks ago and came across a recipe for Chicken Marbella that I'd never heard of before. (I guess it was big in the 80s) It was absolutely delicious with a sweet sauce mixed with the salt of olives and capers. Rice pilaf on the side.
