Tonight's dinner was a recent sort of template for nights we want to eat lightly. Small salad of homegrown lettuce, cucumber and homemade kimchee, sesame oil rice vinegar dressing. Soup is shiromiso with dashi and chicken stock, soba noodles, soft tofu, seaweed and green onions. Leftover roasted yams with 5-spice from last night act as a bit of sweet-savory nibbles.

We invented Jamaican chicken and waffles completely by accident, but now we 're committed to the dish. Chicken; Marinated in buttermilk, house fermented Scotch bonnets from the garden, and microplaned ginger garlic and onion. The coating is green plantain chips, flour and allspice heavy housemade jerk seasoning. The waffles; Plantain, egg, fufu powder, fermented Scotch bonnets, red and green peppers, fire roasted corn, scallions and baking powder. The waffles are topped with housemade blood orange and fermented Scotch bonnet marmalade. The original accident refined. The marmalade is now a house standard.
