    Pork chops with reverse marinade. More or less garnished with onion and jalapeño. Recipe called for grilling outdoors. It was dark and cold so I cooked it in a large skillet. Works just as well except the jalapeño fumes can choke you!

    Got up at 05:00 to put a Brisket on the Smoker. Wish me luck!

    (If and when it's determined to be palatable, I'll try to be sure to post a picture.)

    EDIT: Had to open it up to check probe placement. You'd think that it being 28°F here I'd have no trouble keeping the temp down. But I've got the vents mostly closed to try to keep it below 250°. (Shooting for 225°-240°)

    Also, here's a picture of it after about an hour. Rub was Worcestershire, Sea Salt, Garlic Powder, and fresh ground pepper from a grinder containing White, Pink, Green, and Black Peppercorns.

    Apparently we're pretending we're sipping wine and snacking in the bar down the corner. Oven roast Buffalo cauliflower with housemade hot sauce, celery with Mrs. K's fantastic blue cheese dip and some artichoke and onion focaccia I baked a while ago.

    I'm actually quite sad to say I completely forgot to snap a picture before it was cut and eaten.

    It apparently was palatable and was promptly consumer by my Wife, Daughter, Father in Law and his Wife.

    There is much to learn, and I think I need to dial the salt back a little bit. But it wasn't bad.
