    I had the time for prep, so I made a wellington last night. I used prosciutto and made a duxelles of chanterelles, cremini and shallot. It was excellent. And yes, if you look close you'll see that I needed out pretty hard and scored 'IWL' into the butter puff before I baked it, in anticipation of this post. Don't judge me.
