I have never made pastry before. Mrs. K is so good at it, it just didn't make sense. However, we also have a standing agreement that the one who picks a new recipe makes it. So, here we have a Tuscan brunch torta. It is filled with ham,eggs, spinach, red peppers and basil. Cheese is exceedingly wel represented with homemade ricotta andcottage cheese, plus my own parmesan and some store bought provolone. The short crust was pretty easy and turned out tender, flaky and light.

Too many watches, not enough wrists.
I miss cooking so badly! I've been in hotels for over a month. Moving to a flat today, psyched to cook even a sandwich! Weird, but true.

My wife's 65th birthday today. Of course, this year is a weird one for any celebration. I didn't want anything for mine back in August. She told me what she wanted: to go to our favorite quiet beach (45 minutes over the mountains); Guinness chocolate cake (Nigella Lawson recipe); and Daeji bulgogi (Korean marinated pork). I made japchae and kimchee from scratch and we picked up the raw marinated pork blend from a Korean restaurant that's doing take-out cook-at-home during the pandemic. It turned out rather wonderful, and to benefit, when we had a picnic at the beach (in the cold northern California coastal fog) a raven came to visit us. I gave her a little treat and she hung around a bit, quite friendly. I have a soft spot for corvids.

Cheating here. I made pork ribs in the slow cooker. Recipe adapted from American Test Kitchen. Cooked with only a rub and no liquid for seven hours. After that, coated each side with BBQ sauce of choice and placed under the broiler for two minutes. Let rest for 10. Perfect tenderness. Only thing lacking was the smoke. I will be doing this again! Too easy and two delicious.
