    Sometimes the simplest meals are the best. Fresh out of the oven country loaf made from my current favourite rye sourdough starter, Some of the homemade cultured butter and cumin spiced gouda.

    Summer garden coming to fruition during our continuing hermitage. Here are a few:

    Preserved caramelized garlic - 40 minutes baked covered with foil, sliced through the middle with olive oil, at ~ 180ºC, then squished into a jar with salt and extra olive oil. Lasts in the fridge for months and tastes like garlic candy.

    Caprese salad with tomatoes, basil and Persian cucumber (all homegrown), drizzled with balsamico essencia

    We do a variation. I break full heads of garlic down into individual cloves , leave the skin on , fill an oven safe pan with them, cover with olive oil and confit them. Then store in the fridge in the confit oil. We use up the oil in salad dressings etc. The garlic is not candy like, but is delicious.

    Cold smoked this piece of beef tenderloin yesterday, then air dried it in the fridge overnight. The 2X2 slab got exactly one and a half minutes per four sides on the cast iron flattop over a 600+F wood fire. The chive butter is homemade creamery stle and the bread is the same rye starter country loaf we ate for breakfast. Okanagan Marechal Foch in the carafe.

    Cumin roasted carrots, chilli and onion seeds roasted butternut squash, deep fried seasoned floured mushrooms, tofu panfried with @thaitasteuk yellow thai curry paste which is #vegan (makes amazing satay marinade for tofu), black rice topped with a sauce of miso/garlic/ginger/sesame oil/lime and yuzu paste and finished with chilli, spring onion, coriander, lime, @ticklespickleslondon Kimchi (my favourite kimchi) and @sriracha
