    Geoff, I must apologize, I did not do chicken sausage, none of my local markets carried it and I wasn't driving 45 mins roundtrip to go get it (I can pick it up on the way home from work).

    I did pick up some country style pork ribs for a quick applewood smoke. Turned out alright for a throw together dinner...

    Visiting friend in Central China. Nice restaurant in smart mall. Friend looks up from menu and asks, "are we doing insects?"

    Deep fried crickets: I rather liked it actually. A bit like shrimp actually.

    I was already on a steep enough bit of the learning curve as it was. I think I said, next time.

    In terms of the ingredients, nothing more unusual than what I had already eaten in France, it was the way every single thing was different. By the end of my visit I was quite proud of my ability to pop a piece of frog in my mouth, strip it from the bone with my tongue and then remove the small piece of bone from my month with my chop sticks and pop it on my plate, while chatting away

    Fortunately I wasn't bothered by seeing the animals about to be served up clucking / hopping about in a cage on the street.
