    Lazy Friday supper.A tired old bit of leftover dough really does make the best flatbread. At two weeks old it's developed great flavour and keeping it wet gives it the chance for the oven spring to be huge. Artichoke and onion is the standard at Chez Hank. A quick salad harvest from the basement and Mrs. K's outstanding anchovy heavy caesar dressing for a bit of protein...yum.

    Haven't made a loaf like this in probably more than a year. Pain a la Ancienne. Sometimes you just really want that thin crackerd crust.

    On the left: parmesan type cheese. Two gallons of local goat milk and two gallons of whole milk from a local creamery have yielded about a pound and a half of cheese. It is nearly two months old and has six or eight months more to go.

    On the right: gouda style washed curd cheese. Two gallons of cows milk have yielded about two and a quarter pounds of cheese. It's about a week old and has ten or so weeks to go.

    I will likely wax both of them this coming weekend for their final aging stage.

    I don't know why I'm so excited about this...finally got an enamel coated cast iron pot - it's not the fancy French Le Creuset, but I found this at a Marshalls (discount store) for $40. In some ways it's a little nicer than a Le Creuset because it has the stainless steel knob allowing for higher heat in the oven with the lid. Not bad for the price.

    Color doesn't quite go with the kitchen theme, but will fit right in withh that beach home I'll move to someday

    I've lived in Podunk, Tennessee for about 11 years now and the bagel situation is abysmal. No matter where I went there were only 3 kinds available, plain, everything, or blueberry.
    It appear thing might looking up, though. The Kroger grocery now has egg bagels, one of my favorites!
    Just maybe they'll start making some salt or onion. Maybe some asiago or sun dried tomato!
    Dare I hope?
