It's some sort of old ass race track timing device I saw today in the Daytona Archives Center. Take a look at my other thread.

So, you can get stopwatch sets to do split times, usually pairs, sometimes with a clock making up a trio
The one you’ve posted has electrical inputs, I’m guessing from photocells at the finish line, (and marker posts?) with manual resets
So I’d suggest: race elapsed time is the one on the right. The other two to give running splits: laps, and 1st/2nd, 2nd/3rd place
It's the final countdown! PM me before they're all gone!

That’s the bit that interests me, although I understand why they would buy them in. What are they, how do they work, and what’s the gubbins that connects them to the switches? And what are the two sockets or connectors on the right?

The sockets will be as suggested switch inputs imho , pins are exposed which strongly suggests an input.
An input from some sensor (a switch in one form or another)
The form is reminiscent of rally timer sets , but they were mounted on car dash’s
