    It was delicious.
    The mess was bigger in the kitchen
    I used Linguine. Thicker than Spaghetti. Normally I'd use Mezzi Paccheri but I can't find them easily in London.

    Just returned from a two day trip to Los Angeles in Korea-town to attend a memorial service for my wife's best friend's mother. It's a large extended Korean-Chinese-American family, and the luncheon was at an excellent high-end Korean restaurant called Chosun Galbee. Many types of kimchee covering the table, with japchae, seafood pancake, beef kalbi, chicken, mushrooms on the grill. Korean food is amazing. One of the styles of kimchee was so freshly fermenting that the large pieces of napa cabbage were a bit "carbonated" like beer, with a yogurt-like sourness from the active lactobacillus. Back home now after 6 hour drive last night.

    We always hang onto chicken carcasses from roast chicken, which we make a lot of. I took three of those and made stock flavoured with vermouth and a lot of herbs from Southern France/ Northern Italy.
    Then I poached chicken breasts in water, vermouth, lemons, chives and Italian parsley.

    When the chicken breasts were done I strained the stock and cooked rice in that. Put the last of my garden spinach in the broth, sliced the chicken and added rice. Sort of a florentine soup. Much more subtle than I usually go for, but really delicately delicious. The hint of lemon in the rice put the whole thing over the top.
