    We are talking Sashimi, not burgers.
    And we're talking stupid cold freezing as it is one of the mechanisms by which bacteria is killed in the fish.
    Yes there are exceptions but it (non-frozen) isn't the norm.

    Meh, fish and beef: we eat them both raw and cooked.

    As I mentioned, I don't make sushi/sashimi often, but when I do I eat much of it proper raw. I've actually make it up on my property, in February, from a rich I caught through a hole in the ice on my lake. From being caught to eaten was about 2 hours, with nothing more than a knife between the 2 events.

    Not sure why you're contesting my comment about Sashimi grade fish being routinely frozen.
    An interesting note to it is that one of the "cleanest" fish that doesn't need to be frozen to kill bacteria still is frozen for shipping purposes.


    While we're talking beef as well; good beef (and most other red meat) should be hung before eaten so "fresh" isn't the apt word there either.

    Dinner was a hearty bowl of lamb stew. My wife worked on it for about 6 hours, and it paid off. That was a bowl PACKED with flavor, and the meat was extremely tender

    Lamb stew sounds fantastic!

    Nothing fancy at our house tonight. I made garlic mashed potatoes, corn and a marinated whole chicken. Good comfort food on a cold winter day.

    I don't remember once contesting that. I do remember you jumping in from nowhere to tell me how misguided I was about how I consider the food I eat.

    Good beef is aged before being eaten, you are correct. I'll still call it fresh beef before I grill it though. If I pick a vegetable from my garden, and then eat it a few days later, uncooked, is it no longer a fresh vegetable? Or should I consider them 'raw aged'.

    Loves me some lamb. Ontario lamb is really excellent, and I eat it somewhat often. Also goat. You have to cook goat carefully or it can be quite tough. I have afew recipes for it that I really crave sometimes. I've been known to do a Moroccan-inspired tajine of goat that I think will have to pop up at some point soon. Excellent cold weather food.
