    I did read beans and rice for lunch today......Blackeye peas are traditional New Years dinner here, I'm not fond of Blackeye peas, so Red beans instead.

    Some lovely beef ribs after 2 hours in the smoker and a good rest. The rub I made blackened, but they were juicy and delicious. I've been smoking with hickory lately, it certainly imparts a unique flavour. As good as it was, I prefer fruit wood for beef.

    Yep, I've got quite a bit of it actually. I mainly save it for a nice brisket, other than that I just find it a bit overpowering. Woods like apple, cheery, pecan and alder offer a lighter smoke flavour, but also add in that touch of sweetness.

    Don't get me wrong, I love a good mesquite smoke, but save that for when smoke is the main attraction.
    It is now my duty to completely drain you.
