The Challenge? Can I make mortadella? I am oddly interested in emulsified sausage. It is so easy to mess it up and the texture is so... you know, emulsified...

Is it a pizza? Is it a fritatta? Don't know. Don't care. It was delicious. Blind baked the crust to keep it from going soggy when the eggs were added. Beaten eggs with chive and parsley, aged cheddar, provolone picante, proscuitto and a sprinkling of reggiano.



Geoff, it was easily salty enough that one could do this meatless. There was less than an ounce anyway.

Also, baked a loaf for sammies.

Tried some vegetarian sausage this weekend. It tasted okay, the the texture was so weird.

Egg fried rice with quick pickled daikon and carrot. Mrs. K makes a warm diplomatic five spice powder, but mine is always much more assertive and sharp. I lean heavily on szechaun pepper and cloves. Mrs. K's is better, but this time it was mine. The pickle did a fantastic job of tempering it.
