Loaf #4. The last loaf in this batch of dough. It's a full two weeks old and the dough is tangy but flat. Their is no room temperatutre rise left at all but there is enough oven spring to make a nice loaf of flatbread. Caramelised onion, artichoke and rosemary.
This loaf has an almost cracker like crust and a tangy, chewy crumb.
