    I think you are likely right on the overcooked thing. We had more than a few undercooked things at the resort. The best meal, which was one of two good meals we had there, was when we went to Morón. We found a place called El Angel, which served a fantastic "Cuban Buffet" which was roughly 20 courses and not a buffet at all. It was closer to what we would call family style dining. It included properly cooked lobster and all the things eaten across the Caribbean they didn't serve in any retsaurant on the island.

    Did you get to spend a lot of time in the water? Cayo Guillermo is windy enough that it is a kiteboarding hotspot, but when we were there it was usually too windy even for that.
    I dont ever remember being near an ocean without getting in, it just calls me. I've had a big swin every day, yesterday I tracked 1.2km, including 420m out from shore. That said, the trade winds are heavy, especially in this, their winter. The kite boarding is intense and popular, but the water is warm and enjoyable despite the chop.
    I enjoy Moron, I consider it the city of resort employees as many of them live there due to being the only real city before the Cayos, where I believe no local residence is allowed. That's not an insult, it makes the town very friendly and engaging, even by Cuban standard. I've seen much of cuba over the years, among my favourite dining experiences was actually in Havana, where many open the ground floor of their home as a 2 or 3 table 'restaurant' and cook from their own kitchen. Very authentic and excellent.
    It is now my duty to completely drain you.

    Fresh picked. This will make a delicious salad to go with tonight's all tempura fondue. There are three types of romaine, Chinese greens, young beet greens and watercress. A riot of flavour and texture.

    I'm not such a fan of beets, but I love beet greens. I get them for nothing at the farmer's market. There is a stall that sells greens, and you can buy nice beet greens there. There's also a stall that specializes in roots and tubers, and he happily gives my a fat bag of fresh beet greens. I often wondered why he doesnt make some handshake agreement with the greens stall guy, but there is an element of politicking and even animosity between many of the stall owners. I wont complain if they never figure it out.
    It is now my duty to completely drain you.

    There are varieties of beet that don't really grow beets, just greens on a more or less regular root. The nice thing about that for greens is they require so much less real estate, or in this case can be grown hydroponically.

    These particular beet greens come from that variety. I do like beets too though, so I grow regular ones in the outdoor garden.

    Wow, I thought that was only a regional thing. I've never seen pork roll outside of the Philadelphia and New Jersey area.
