    Took some of the confit garlic cloves and smeared them on the underside of the legs. rubbed some of the garlic rosemary olive oil on the top side. Into cat iron and into a low oven, 250 F in this case, and ignore for at least an hour and a half.Not quite roasted, not quite confited, maybe better than either. Finish with lemon zest.

    Dinner tonight with friends. We are contributing two sides. This will be our first co-Indian meal. I cook Indian food the way Indians cook it here in North America but Paul, being a Yorkshireman, cooks British Indian which is a different food that looks similar.

    We are making two sides, naan and kashmiri pilau, and I am just getting the mise together. Mrs. K is off fetching some pistachios and/or cashews as I've eaten them all.
