Yup, though with things like garlic or chiles heating the oil gently helps draw the flavour out quicker.

The flavour of the garlic itself is something.

So I could, for example, take a bottle of off-the-shelf olive oil, put it in a jar with some rosemary and thyme and wait a bit and then I'll have rosemary and thyme infused olive oil? I'm liking this idea quite a bit.

Picked up 4.5 kg of cranberries today to start freezing for my years stash. I need about 2 more kg to make it. The day after Thanksgiving, the price drops 50%!

There's always an olive oil that comes in a bottle with a swing top lid. Our Costco now has pair of decent unfiltered stuff in 1l bottles with good ceramic swing tops. Smash a few garlic cloves, split some chilies, select a few choice fresh herb stems, and get it all into the bottle (drain 1/4 out for space). This is the easiest way but it is effective, and well worth trying. Soup, pizza, eggs: so many shades of excellent.
It is now my duty to completely drain you.
