    With deveined it's easy. The shell is already split down the back. Grab the shell on one side at the split and pull.

    Cooking them is very difficult if your skewers are light like mine. It was hard to cook them evenly. Next time I do this, I will acquire heavier skewers. Done on a nat gas grill.

    Like Geoff, I am still experimenting to discover the steps towards the best homemade pizza. Homemade sourdough crust (our own local airborne San Francisco wild yeast, a mother we started 10 years ago.) We don't have a brick oven, so this is on pizza stone in kitchen oven high heat (500º F). A few tweaks and it could be the golden target. Now all we need is a clay dome wood oven. Not in this life, alas.

    We have a rather strict no-burn condition this summer. Sigh.....
