Prepping for the birthday BBQ tomorrow. Five sauces. All but the Kansas City sauce is not what is generally expected in a modern BBQ sauce.The other four are more obscure variations from the Carolina's and Alabama.

The big red piece is a full butt roast from a purebred field raised Berkshire hog, one of the best tasting hogs. The smaller, greyer one is a 4 pound picnic from a store, that I'll also BBQ as backup. I am concerned the 10 pound butt might not be enough.
The butt will be on the BBQ for about 12-15 hours tomorrow, The little picnic will only take 6.
