    Kumquat marmalade, reducing for a while on the stove. Our bush usually produces a small crop of 50-100 kumquats in early summer. We are getting more than usual this year, and they spoil quickly. It took about two hours to seed and chop so much little fruit, and the results will look small in comparison to the effort. But it lasts a long time, and has a wonderful aromatic intensity.This year I don't think I'll bother to properly can it. I'll just keep it in the fridge and we'll start using right away.
