    The spinach from the garden is really lovely this year. That is not always the case. It often gets burned in the sun. I spent the last week harvesting a handful of baby leaves each morning and evening for what I consider the single best way to eat spinach. This is a salad with artichokes, mushrooms and lemon cured pork loin topped with 12 month old manchego and an English style cream dressing. The pork loin is similar to back bacon, but the lemon and herb cure make it especially good for salads.

    I don’t think I’ve ever found a bad way to eat spinach. Best vegetable, by far.

    The Salvation Cafe in Newport, RI served deep fried spinach.
    They dropped a bunch in the fryer and it would come out extremely crispy, then they would put some sea salt on it and serve.
    Man was it good!
