    I can do anchovies. There's place here that does awesome wood fire pizzas, and one with dried cherries & Prosciutto that was really good. I like unboreing, just no pineapples.

    I imagine you'd need something pretty sweet to temper all the salt that comes out of the prosciutto when it gets heated. That or something like mushrooms that need a lot of salt. Those are the only two ways I'll do prosciutto on a pizza. Though I've never had it with dried cherries. I will do it with real pineapple and the bakery near my house does one with grapes which is pretty nice.

    Had that for the first time recently. Did not like it. Much like pineapple, I like anchovies, but it’s possible that they don’t belong on a pizza. However, I will place a caveat—the pizzeria where I got it was in general not good. So I’m open to trying anchovies again.

    Since I am not really keen on seafood on red pizza I more readily understand why people don't like anchovies. Tomato and pineapple are fruits that belong together though, especially with salty pork. Not that I am trying to convert anyone.

    I don't use apples in burgers, but it is the reason my homemade ketchup looks and tastes like ketchup.

    I prefer to think of it as a centuries old tradition that is making a comeback. Real mincemeat has meat in it, as well as fruit, and has for centuries. Duck. Morrocan food, specifically and North African and Middle Eastern food in general. Thai. Indian. Even here on the praries local game and local fruit are centuries old traditions.

    I do agree that some of the things some chefs do is quite ridiculous, but the same could be said of some of the things they do with meat. Turducken, for instance ends up having none of the good qualities of any of the birds used to make it. I am pretty picky about mixing meat with meat.

    Caramelised apple in a burger can be epic. Actually raw too - cold, wet, crunchy, sweet - all things I welcome in a burger.
