    Super rustic sheet pan pizza; slow dough, diced tomatoes, onion, pan fried shiitakes, the ends of the pancetta I made, burrata and a little plain mozza. One of the best pizzas I've ever made.

    Basic but tasty. Chef had to do a butter analysis, that just happened to involve filets.

    Thanks it was. Usually when I do slow pizza dough I use it for thin crust pizza. I think this is the first time I ever did it thick enough to rise in any meaningful way and I loved it. The burrata was a nice touch too.
