    Thought I'd try to smoke a brisket today. Have had good results with ribs on the gas grill, but let's see how this goes. Will be a few hours more needed.

    A winning combination. We've done similar before. Melon and prosciutto are a long established pairing. The Arugula and Mrs K's champagne vinaigrette add another layer of interest and another counterpoint.

    The bottom part of the brisket (the flat I've learned it's called) turned out great. The top part (the point) however was way too dry. My guess is fat cap was too thin and heat a bit too high. Still pleased for a first attempt
