    I make a lot of pate, I just never take a picture of it. Couple of Fridays back, we ate at Bistro Niko where they served a country pate, just like I make. So here is a picture of their country pate, which looks like mine, along with the bread and gurkins. I just can't do the plating stuff.

    Nice! I'll do pork shoulder for 10 or more hours at a whack in my BGE. Ribs for half that. Never thought to do skewers.

    I think cauliflower mash, instead of potato, is a solid choice for any member of the salmon family, but it seemed specially excellent with tonight's oven roast steelhead.

    We love cauliflower mash here. Maybe because I usually add a bunch of melty cheese into it. Yummy that way, not so healthy anymore.

    Cauliflower definitely needs to be mashed, or covered in cheese sauce and baked. Rather dull otherwise...
