I usually photograph smaller portions then pile more on and stuff my face! It was actually a bag of frozen mixed exotics - mostly cep and chanterelles I think. Very tasty.

Five days in a spiced sugar cure, now one day in the fridge in a spice blend, then I get to stay home on Friday so that I can smoke my version of Montreal Smoked meat/ corned beef/ pastrami. This is five pounds of eye of round.

Slightly over-cured and a touch dry, but lovely steamed and fantatsic flavour.

To be honest, this thread is full of amazing food! I am pretty stoked to see so many people doing so many cool things with food. I have enjoyed perusing this thread immensely. I almost never cook at home since I cook at work. Thank you for having me. I hope to outlast any Troys that have preceeded me. Have a great day.
