    A friend gave me some homemade mango/habenero hot sauce, this week.
    Last night I took a couple of boneless loin chops, coated them with the sauce, and then coated with panko, refrigerated for about 20 minutes, then just baked them.
    They were great. Too easy.
    The mango is too sweet to use on stuff like eggs (I love hot sauce on eggs), but on pork, it was just right.
    Next week i might try the sauce on a burger. Maybe with some Manchego on it.

    Default for me is when all else fails- hand cut pappardelle.

    Which isn't even close to being a good choice for everything, but it works for me.

    My version of the North Texas Red today. http://tomwestbrook.com/north_texas_red.html


    3 Guajilla, 1 large Mulato, 1 ancho and 1 Chipotle.

    Boiled for 20min to bring back to life. Then blended with fresh habanero, a couple of Serrano and added to the browned chuck.

    5 lbs browned.



    I add black beans right at the end so not really traditional.

    Also way less tequila today..
