    This weeks bread- two variations of the classic batard. I am working on my slashing skills, but I do not think my new lame is up to the task. I am working on getting leaf slashes, where the upper crust of the bread peels up and away from the body. This slows down oven spring and promotes bigger air pockets in the crumb.

    Even though the slashing did not work as anticipated, I did get excellent cracking on the crust.
