I strain hot to make sure I catch only true solids. This gives me a velvety stock that jellies perfectly when cooled. Freezes very nicely and I use it as the moisture in a wide variety of culinary applications.

    I'm too old, or maybe just too smart, to run a restaurant. I'd love to do a painting for you though. No rush, as I am so far behind on my obligations. There are at least two guys here on the forum waiting in line already.

    For breakfast, huevos rancheros. Corn tortillas, refritos, poached eggs, cheese, chorizo, and some pretty warm salsa verde.

    No pics, I wolfed it down while it was hot-hot-hot.
