What else is in the couscous? Nothing. 3/4 c dry couscous simmered very low covered for about 10 minutes in 1 c broth.
What else is in the stock? It is chicken backs, Meyer lemons, garlic, pepper, bouquet garni, and saffron covered with water in the cast iron Dutch oven, and I bake that covered all day. My 'secrets' (that I am now posting on the Internet to live forever) are to go very heavy on the chicken, I use fresh backs from a local butcher, and to strain excessively: I go from collander to mesh to increasing layers of cheesecloth until I have a very pure stock. I strain hot to make sure I catch only true solids. This gives me a velvety stock that jellies perfectly when cooled. Freezes very nicely and I use it as the moisture in a wide variety of culinary applications.
It is now my duty to completely drain you.

For breakfast, huevos rancheros. Corn tortillas, refritos, poached eggs, cheese, chorizo, and some pretty warm salsa verde.
No pics, I wolfed it down while it was hot-hot-hot.
